Citrus and Allied recently introduced a new line of molecularly distilled essential oils, to expand upon our offerings. Our molecular stills are described as “thin film free falling” molecular stills, and do not resemble a fractional still with its pot and column design. In a molecular still design, an oil is pumped into a heated chamber containing rapidly revolving rods, creating a thin film along the walls of the chamber. The oil is quickly heated under extremely high vacuum and is said to follow a “short path” because the evaporated fraction condenses immediately after traveling a very short distance. The practical result of this process is that there is no thermal degradation and we are able to produce ingredients with superior aromas and flavors.
